
This is mightily good stuff and this smooth chocolatey liqueur is pretty much a dessert by itself. Chocolat Luxe is a combination of the original Baileys Irish Cream and Belgian chocolate that apparently took three years to perfect and is the first-ever combination of real chocolate and liqueur.
Try it served over ice, or try the following recipe with vanilla bean ice-cream and mint biscuits. Of course I had to perfect this recipe too, and try it several times, not that you can go wrong with the amounts, but it doesn’t hurt to try it out several times anyway!
I have heard that the Chocolat Luxe is a limited edition, but I hope this is a nasty rumour, and it will continue to be available.
RECIPE: Baileys Chocolat Luxe with Vanilla Bean Ice-Cream and Crushed Mint Biscuits
20-30ml Baileys Chocolat Luxe liqueur
Vanilla Bean ice-cream
Griffins Mint Treat Bites Biscuits (“mini biscuits topped with mint crème and covered with dark chocolate”)
- Ahead of time, place mint biscuits in the freezer and when frozen, crush or pound the biscuits into small crumbs.
- Place vanilla bean ice-cream in a dish.
- Pour the Baileys chocolate Luxe over ice-cream, and sprinkle with crushed mint biscuits.
