
This is a standard muffin recipe that is actually called ‘Feijoa Muffins’, but Mum is always coming up with new combinations of fruits to add to the recipe. So with this in mind, Mum set out to make muffins out of frozen stewed fruit, plus some fresh rhubarb that she had to hand. The stewed fruit was: stewed plums with rhubarb and a bit of strawberry thrown in that Mum had frozen into blocks. (The plums in this mixture were Black Doris and another variety of plum with a yellow flesh). We thawed this out and strained it to remove the liquid. This gave us half a cup of stewed fruit, so we topped this up with half a cup of freshly picked rhubarb roughly cut into small cubes. So as you can see, this was a bit of a “mish-mash” of fruits and leftovers and this is where the title of the recipe takes its name from. Mum’s actual quote was: “’Mish-Mash Muffins’ we’ll call them”. This goes to show that the base recipe is excellent for adding any types of fruits to.
1 ¾ cups flour
1 cup sugar
1 teaspoon baking soda
½ cup oil
½ teaspoon salt
1 cup fruit
1 egg
Sift the dry ingredients into a bowl.
Add the oil and fruit and a well-beaten egg. Mix lightly and quickly by folding the mixture.
Place the mixture into greased muffin tins.
Cook at 200-225 Celcius for 20 minutes.
This makes 12 muffins.
