Mum said this should be called “Mum’s Delicious Christmas Cake With Butterscotch Sauce and Cream”. This title is very descriptive and true, and sums it up nicely, so that’s what the title will be.
In fact it was so good, that the photo above represents how fast we ate it (and cleaned the plate).
Last year we cut slices of Christmas Cake and warmed it slightly in the microwave, then made a Butterscotch Sauce to smother the cake in, then drizzled cream over as well. It was so good that we did the same this year. I think we may have the beginnings of a tradition here.
The Butterscotch sauce recipe is one we use often as it is quick to make. We have found that the browner the brown sugar, the better looking the sauce is, as it takes on a richer, creamier look.
BUTTERSCOTCH SAUCE
½ cup brown sugar
¼ cup cream
13 g butter
¼ teaspoon vanilla essence
Combine all ingredients in a saucepan and stir over a low heat until the brown sugar has dissolved and the butter melted.
The above recipe is the one we used this year, but I see, that looking back in my book at last years recipe, we made it slightly differently:
2 ½ tablespoons brown sugar
30 g butter
and some cream
Either works fine.
